Give it a taste, and add more lime or salt as needed. Cover and refrigerate.
  4. Wipe clean the pan you used earlier and put it on medium-high heat. Add a splash of veg oil. Cut the trout into 3 or 4 pieces about 5 cm wide, and season with salt and pepper. Sear the trout for 3 to 4 minutes per side. Serve immediately, topped with a generous helping of the salsa and a drizzle of the lime cream.
