  2. 1 tbsp rice wine (cooking wine or sake)
  3. 1 star anise
  4. 2 cucumbers (thinly sliced)
  5. 1 medium tomato (thinly sliced)
  6. 2 tsp grated garlic
  7. 1 tsp sugar
  8. 2 tbsp soy sauce
  9. 1 tsp sesame oil
  10. 1/2 tsp hot chili oil (optional)
  11. 5 slices ginger
  12. Sliced green onion or cilantro for garnish
  13. 8 cups water

Instructions to make Suan Ni Bai Rou (Boiled Sliced Pork with Garlic Sauce)

  1. Thinly slice few pieces of ginger. You don’t need to peel the skin but make sure to rinse the ginger thoroughly before cutting.

  7. There is no right or wrong way of cutting the pork belly for this dish. You just need to make sure each piece of meat is very thin. I cut the whole pork belly in half first. And then thinly slice against the grain. If your pork belly is not cool enough for cutting, you can put it in the refrigerator for a little bit. The pork belly will be cooler and firmer so you can easily cut it into thin slices.
  8. Place the cucumber slices around the edge of the plate. Next, place the tomato on top of the cucumber. And add the pork belly slices in the middle. Finally, drizzle the sauce on the top. Sprinkle some green onion.
